We use a mix of organic tomatoes from Valdivia Farms and Wong Farms, depending on how much they can provide me with every week! It's raw and gluten-free and sells out every weekend.

Inspiration

During my infinite strolls in the streets of Spain before I moved to California, I visited old bars without even paying attention to my surroundings while sipping a little caƱita (small Spanish beer) trying to cure the weekend morning buzz of the typical hangover.
Now I can't get any of that, including the hangover... and how I wished I had captured all those images with my camera!! I am going to ask my cousin Sergio de Arrola, the talented photographer -Rolling Habits- to revisit certain places that played such an important roll in my memory of growing up in Madrid.
These are inspiring places that I found while doing research for Espanolita's future.

Coming up for air

It has been very hard to try and do everything efficiently these days. I am a one man small business, with huge passion for simple food, and really want to teach others my perspective strongly influenced by what I have learned through my life in Spain and the Mediterranean. Simple, rustic, unpretentious is always best when dealing with what we eat. California is such a reflection of this lifestyle and I again get asked the most unbelievable questions. Is it gluten free, dairy free, is it healthy? There is such a misconception on what good food really is, and in my opinion the right answer is balance.
But unless something is labelled vegan, rawgan, gluten free, etc... people don't see the benefits.
I wish I could help contribute to changing things beyond trends. And that people stopped to read the labels before making assumptions.
I am figuring out my next steps. New shops are interested in distributing my products, and my plan to open my Pop-Up in Grand Central Market is coming closer every day.
Meanwhile I must keep going strong, never stop and keep spreading the knowledge.

My farmer friends...

I see the seasons change so dramatically here in desert Los Angeles, and I ask the farmers how their crops are doing. Not so good some say... It is crazy that trees have been flowering for weeks, and now after a warm 2014... is now winter again...
I am happy I can make Gazpacho, but I could do with longer winters..
